Aftermarket temp

Where's the plug on a straight-6 to install an aftermarket mechanical water temperature guage? I've got 6 feet of wire that ends in a 2" tip, but can't find anywhere to put it! I don't want to just start unscrewing bolts on the engine block not knowing what will start gushing out...
