1956 Ford Victoria...Restore or customize??

I've recently acquired a 1956 Ford 4 door Victoria that was my Grandfathers. It needs a lot of work! It has a little rust, some dents and scratches, and the headliner and seats need to be redone. However, everything is original to the car, the engine, the transmission, the radio, ashtrays, everything.

I really need some information. Is this car a desirable classic? What would it be worth if I restored it to its original condition? Are 1956 Fords shown at car shows? What are typical customizations options for this car?

The mechinac has stated that he can make it into a "Grandma mobile" or a "Hot rod". I'd like to keep it original but that means no air conditioning (I live in Houston), power steering, etc. I don't plan on driving the car much but when I do I want it to be dependable and cool.
