Stalling

I have a 92' Bonneville with 3.8 L engine. The engine will start and idle fine until the water jacket get to appox. 180 F. At which, time the engine begins to idle rough and then stalls. The engine will not re-start untill the engine temperature gets below 120 F. Could somebody suggest what I should be looking for to repair this challenge.
