The temp gauge sensor is actually separate from the computer's temp sensor(the computer sensor is on the 'stat housing and the gauge pickup is on the rear cylinder head), and the computer doesn't look at oil pressure at all, so don't worry :) .
The length isn't really an issue as long as you buy gauges with electrical sending units(they use wires instead of a sealed copper tube), you can run the wires as long as you need. Most aftermarket gauges come with a sending unit, so you can just remove the old factory ones and throw them away. The factory gauges never were very accurate (this is true on most older cars) and with age they get even worse.

oops, I made a boo-boo, the computer DOES check to see if there is oil pressure during cranking before it will allow the engine to run. It's just one of those little safety mechanisms car makers designed for people who don't know how or are to lazy to read an oil pressure gauge. There's a easy way around this, and I will tell you what it is, but first I need to look at the underhood wiring diagram in my shop manual, which has wandered off somewhere...

i have an 86 gt also and i put in aftermarket guages. i have an electic water temp and a mechanical oil press as well as a tach i hooked the tach up to the MSD box and its about 200 RPMs off the old on i ran all the wires through a hole right above the ecu other then that every thing is fine took the factory oil press sending unit out and my car starts and runs fine
