ok my truck tires are p 235 55 R16 and i need winter tires and 3 different people from 3 different tire stores said i could put p 205 75 R 15 on.. Will is work?

Should work good, 0n 15 inch rims. They are nice skinny tires, and should be good in the snow. Get studded if your allowed to in your area, it's a big improvement

but technically because they are winter tires and the rubber is way softer would it flatten more when driving and equal out??

You have to do the math.
add (55% of 235mm) to 8" = (radius of 16" rim) X pi (3.1416) = circumferance
and compare to
(75% of 205mm) + 71/2" (radius of 15" rim) x pi = circumferance
Just a hunch, but they might be close.
