Coolant Warning light on, except when AC is on???

I've been having a problem with my 1997 Saturn SL2. The coolant warning light was flashing and it was overheating, so I had the water pump and the driver belt replaced. It was fine for a few days and then the coolant warning light started flashing again. The only way to keep the light from flashing is to have the AC on all the time. It's not overheating like it was but if I turn the AC off the temp will rise after a while. Since the weather is getting cooler now I would prefer not to have the AC on at all times. Any reasons why this is happening or any suggestions on how to fix it?
