95 check engine light

Okay, I have a 95 dodge neon Highline 4dr. When I purchased it 4 months ago it had SERIOUS issues. the previous owner treated it like crap, the oil had rarely been changed, the coolent was low, and it was 3quarts of oil short. After I fixed all this, I had to rewire the duct tape job they did on the radiator fan and replace the spark plugs, wires, and oil cap.
After driving the car to Oklahoma city (30 minutes of highway travel from shawnee OK) the check engine light came on. I pulled into my dads driveway and looked around, finding my 3 quarts of oil all over the underside of my car. with a little reasoning I started cleaning and found it to be the oil pan gasket was leaking, so I replaced it. this solved the check engine problem. However, every time I do more than 20 minutes of Highway time my check engine light comes on, even though I'm not leaking any fluid, not over heating, and not burning anything. Worse over, the light will go off for no reason the next day if I don't do any highway time.
Any ideas?

I must be reading the code wrong because I didn't get only two numbers. It first flashed once, then in a sequence of numbers. I'll list then in order.
1 2 3 2 5 5
is this actually three codes that its giving? (12, 32, 55) or am I reading it wrong?

take it to the shop....
I don't take cars "to the shop" since I don't trust anyone to have ethics or professionalism these days. There isn't anything a machanic can do in his shop that I can't do in my garage anyway. Thanks for the suggestion, but I could really use some advice like "this part might do it, or maybe this one" rather than "pay someone three times what they are worth to rip you off for four times the parts and five times the labor."

it should blink 1time pause 2 times long pause a number of times pause anumber of times long pause,( may do this a number of times if multiple codes) then 5 times pause and 5 times pause. the 1 and 2 always seems to happen for batt code then the 5 and 5 signal end of sequence.
neons.org has the better descript but this is as simple as I know.
