Question:
Do 32 inch tires rub because of the diameter or the width ?
The reason I ask is that I was planning on getting 31 inch Pro Comp muds, but the diameter is only 30.2 which is barely bigger than stock. The 32 inch is only 31.2 so shouldnt be much of a problem, but they are 11.5 inches wide. I have no plans to do any kind of lifting, so will the 11.5 width rub too much ?

Both affect rubbing at the bottom of the wheel openings when you get to a 32x11.50 size, as well as likely contact your fuel line cover in the rear. The 32" diameter will also be likely to rub at the inside top of the wheel wells up front, which can be nearly eliminated by a mild adjustment of the torsion bars that shouldn't take you out of alignment spec or put too much stress on your steering if done in proper moderation.
If the ProComp is 31.2, that compares to 31.7 according to BFG for my ATs. I'd say you'll be OK with the usual trimming of the flares and bumper wings. Pretty much what the rest of us that run 32x11.50 put up with (certainly tolerable), but perhaps a tad less.

Now my dilemma is that unless i can get 4 for the price of 3, buying a 32 inch tire to get a 31 makes the Pro Comps very expensive.

In general, tire width will give you more trouble than tire height in regards to the Xterra and how much you need to trim. The fender wells are simply not very wide.
