OK, so at night when I'm driving down the street, the lights (all of them) dim (slowly) for less than a second and then go back to normal, it'll do this about maybe 10 times in a 25 mile trip. The JEEP doesn't seem to be losing power, radio doesn't get interrupted, although it happens so quickly it'd be hard to tell.

So what's the deal.

I would first take your jeep to advance auto and make sure your charging system is good. At night your putting more strain on this system than during the day. Also, if this happens again, tap your brakes, and turn on the a/c this little trick will put more of a draw on the alternator, if there is something wrong in the charging system, that will prove it, if not. Than look at your headlight switch, and the wires leading out of it for any "melting" . Also look at your grounds. Make sure there tight and clean.

Charging system is ok, so I guess I better start looking at the switch, afterall it is 17 years old, nothing lasts forever....even on Jeeps!

Does it have air? When mine cuts in at night and the electric fan cuts in the lights dim for a split second. If you watch the volt meter you will also see a dip there. Been that way since new.
