I recently bought a 1966 ford galaxie in great condition with no rusting visible, the dilema that I have run into is to keeping the car as original as possible. I have been advised by some to replace the drum system and convert to disc brakes for better stopping and safety reasons. Well I am swaying toward the conversion kit but the price range from $800-1200 is a little ridiculous. Is there any way around this, without paying the high price?????????

Do some research and its very likely you can snag the front disc setup off another fullsize Ford/Lincoln/Merc passenger car. You might even be able to find one off a factory disc brake Galaxie. It wil cost alot less than buying new and even exchanging the parts for rebuilt is fairly cheap.
I had a '65 Mustang and swapped a Lincoln Versailles disc brake 9" rear. Fairly bolt-in. Just an example.
