Over-fueling

I've a Mk2 Golf GTI 8v 1991, It has just started acting up. I've replaced the plugs, leads, distributer cap, rotor arm, radiator, starter, alternator, fuel filter, timing belt.
I also got rid of the Cat. about a year ago and it was running like a dream.
When I try and start it from cold it takes a couple of turns before it starts, but after 2 or 3 starts & stops it won't start again, It stinks of fuel, the plugs are sparking, it's getting fuel, and it starts with a bump start, the fuel pump is working fine, so is the air flow meter.
Sometimes when ticking-over it revs from 750 to 1300 and keeps going up and down (hunting).
I can't remember if there is a cold start injector, or a sensor for the auto choke.
