ceramic vs. carbon metallic, plus new rotors?

I'm hoping to upgrade my stock brake pads on my '95 GT (the rears are beginning to squeal). The guy at the local parts store said that ceramics wear better, are quieter, with less dust, but they're harder on rotors. Do most upgrade rotors? What if I don't? Anyone with experience?

Also trying to decide btw Baer and Performance Friction -- any preferences/reasons? I've not had any seat-of-the-pants experience with anything beyond stock, sadly.
