I have a 2000 Jetta and I have been getting a check engine light. When I check the code, I get a 1255. I can not find out what this code is for. Does anyone know what causes this code? If I clear it, it comes back a couple of days later.

It can only mean one thing. Your car's CPU has become self-aware. KILL IT!

I just pull a Homer, cover the check engine light with a piece of tape :)

P1255 is engine coolant temp circuit shorted to ground. Check that the temp sensor wiring harness isn't damaged. Sensors aren't that expensive to try.
