I have a turbo xs boost controller the manual kind,exactly how do they work?

they controle the amount of air pressure going into your tb.

To accurately answer the Q... A boost controller controls the amount of pressure that there is from the turbo all the way up to the intake manifold... Your/all turbos have a wastegate(internal,external) that is opened and closed depending on the amount of the pressure that is built up...a boost contr. changes when/how much the wastegate is opened/closed. If you are going to put one in, anyone with knowledge of this will tell you to install a numbered boost guage so you don't end up OVER boosting and getting little demons in your engine. Hope this helps.
