I personally hate replacing the shoes on my rear brakes. Just make sure you have some good big grippy pair of plyers for those stubborn springs and dont forget to buy a can of brake parts cleaner. You'll need to completely spray down the whole assembly to get rid of the brake dust that accumilated before doing any work. For me it takes a good 20 minutes per side to do rear brakes vs. 5 minutes for the front.

To adjust the newly installed brake shoes, get a flat head screwdriver and click the adjustment fork until it pushes the shoes against the drum with a little amount of friction, of course you'll need to slide on/off the drum to do the adjusting to check.

when it came time to change my back brake shoes, i took the easy way out and switched to disk brakes :D. It also worked out so both my rear wheel bearings were bad, so i killed two birds with one stone

You should probably look into getting new hardware too, its a common overlooked rear brake repair but its pretty important.
