Displacement Questions? (Bore & Stroke kits)

I already know I cant gone past an 84.5 mm bore on my cylinders, but what about stroke? I'm I able to stroke my motor (with 84.5 mm bore) to a 2.5+ liter displacement? Would there be any problems? The guys at crower said It would have to be a custom stroker kit (lots of money). Please, any advice would help.
