I dont know all the years and what little changes there were.

Lets see what I do know...

1967 - 1980 all the blocks had a Driverside oil dipstick, perimeter bolt valve covers.

1981 - 1986 all blocks had passenger side oil dipstick, perimeter bolt valve covers.

1987 - Present all blocks had center bolt valve covers

LT1 350 (1992 - 1997) all blocks had center bolt heads, aluminum heads, reverse flow cooling.

LS1 350 (1997 - Present) All aluminum 346ci block with 6 bolt main caps.

All i can think of off the top of my head. Somebody feel free to add to or correct me.

Good Question

Every thing that you said right. Additionally, 1986 and older external parts (intake/ exhaust manifolds, transmissions, oil pan, etc.) will fit each other. In 1987, GM changed the valve covers and the intake manifold bolt patterns. A few years later (I am not exactly sure when) the Vortec heads changed the intake manifold pattern again,
