Cylinder Head Selection & Replacement

G'day everyone. I am brand new to the forum and looking for some info. After poking around, I think I'll be staying and helping where I can.

I have been losing coolant in my 2001 GXL Prado, 1KZ-TE. Moisture in the oil cap and a $6k quote from the mechanic, has prompted me to pull the head off.

All done and dusted. My hopefully final problem with this repair is the 1KZ-TE came out with both recessed and flush valve cylinder heads. What I need help with is merely a knowledge check. It is my understanding that the relief between the piston and valves can either be: a) In the piston head themselves or b) by making the valve recessed. My piston heads appear to have relief built in based on the additional v shaped indent. Would this mean my engine requires a flush valve cylinder head?

Bonus, I feel like the cylinders are pretty good for a car with over 300km. There does not appear to be play in the pistons and they move symmetrically and freely. Does the cylinder look okay?
