2013 Dodge Journey sxt air condition cuts on randomly

Howdy guys so this ones weird for me can’t find any info anywhere but my family owns a 2013 Dodge Journey sxt and randomly the ac keeps cutting on doesn’t happen often and seems to be effected more when it’s hot outside but an example we were driving today and the ac was off windows down and it cut itself on my wife said see this is what I was saying and turned it off where she said watch it’ll do it again because of course I thought I was crazy but nope just like she said not even a minute later it had cut itself back on any ideas what the issue could be??

If you're in the defrost mode the A/C will come on.

It wasn’t it was in regular a/c mode as far as I’m aware anyway
