Chevy LUV Engine

Hello all,
My first post. My wife inherited a Chevy LUV with great sentimental value to her. We have replaced the bed, re-upholstered the interior( seats, dash, door panels, and headliner) and stripped it of anything nonessential that kept dropping mice turds. The truck sat for years in a field and then in a garage. I rebuilt the carburetor just to have the freeze plugs all Pop when I finally got it to run. $5000 budget. Thanks a million.

My question is: Can I install a Toyota Tacoma 2.7 in this Chevy LUV instead of sticking with this junky Isuzu 1.8? How would I mount it? While I'm in and have the money, is it worth installing a Toyota automatic transmission as well? Or keep the manual(which is currently in fantastic shape)?

The LUV is a 1975 2wd
regular bed
1.8 Isuzu gas
Single rear window
New Paint job
