Over cooling tbird sc

When hit the gas pedal on the highway, my temperature guage drops rapidly? Is it air in the cooling system? I'm using prestone 50/50 in Canadian winter... I have new 192°thermostat and no visible leaks.... As the Guage reading drops, the heat get less in the car, but still warm just les...

I would suspect the new thermostat is faulty.
