What's the difference between Grand Prix and Grand Tourer? And can all sports cars be called GT's or GP's?

1) "Grand Prix" could be the prefix or suffix of an event title.
Like--Grand Prix of Monaco,
or Texas Hot Chili Cookoff Grand Prix.
There was also a car called the Pontiac Grand Prix.

2) Sure, why not? It's up to the Automakers marketing hype departments anyway.

Are all competitions where you race Grand Prix'es?

No, it's just a way to give the event name a bit of "flash".
Grabs the eye. Makes an impression.

You could name a race event--"SCCA Western Regional June Sprints at Pacific Raceway"
or
"Toyota Grand Prix at Pacific Raceways".

The first title is very informational, tells you what's going on and what type of racing to expect--if you're a car guy.
The second is flashier and gets the name of the sponsor (the dumb bunny you are soaking for the bill. All car racing is pretty much a dead money loser so you need a sponsor.) in, as well as hooking a non car guy into being a potential spectator.
Spectators bring in money to the people selling the programs and the hot dogs, who seem to inflate the price of the dogs because it's always for some form of charity. :)
