I was at work today, and while we were cleaning up the used car lot, I came across a 2000 ford mustang. It looked like a regular v6 model. It had the fake induction scoop on the hood, the v6 spoiler, and a 5 speed in it, however on the side it has GT badges. My question is, did the 2000 model year GT's resemble the V6 of 2001 and 2002? or did I merely see a wannabe?

It looked like a regular V6? What does a regular V6 look like? Maybe it was actually a V8. The induction scoops on all the newer mustangs are fake and non-functional

Except the Mach1, which has a functional shaker style scoop on the hood

True, but by the time the air enters, turns right, goes down, turns left, turns right agian, then goes back up, and then turns left again before it enters the TB, might not make it logical. hahaha:D

Depends on what year.
the 99-2000 GTs and V6s had the same hood design, small cowl, no actual hood scoop; part of Ford's redesign look. In 2001, with the advent of the Bullitt, hoodscoops were put on all 2001 GTs, except maybe the Job 1 models. Since then, quickly running up on the 2004 model year, all GTs have hoodscoops. Also, 2001+ GTs have smoked lenses from headlight and most of them carry Bullitt rims.
You can get a GT hoodscoop v6 but its called the Pony package and its available now from Ford.
There are more stuff but I'd rather leave it out.
