AC High Side Rapid Fluctuations

Hi everyone,
Please forgive me, I'm new. I have a 97 Chevy s10 PU, 6cyl. I replaced my AC compressor today because my old one blew a seal (but didn't seize up). I also replaced the accumulator, and put the correct oil 150 PAG in--4 oz in the compressor, and 2 oz in the accumulator. (The system calls for 8 oz, but I put 6 in to account for oil already in the evaporator and condenser). I pulled a vacuum for 1 hour, then put two 12 oz cans and a little bit of third can in. It was 98 degrees ambient temp. With the truck idling, the low side was reading between 30 to 40 psi and the high side was reading about 225 psi. Everything seemed to be working fine. I cold air in the cab at about 60 degrees.
Here is my problem: The high side gauge was fluctuating rapidly around 225 psi :shakehead. I tested my gauges on my toyota and there is no fluctuation--so I know it is not my gauges. What could be causing this, and is it safe to run the AC knowing this problem exists? One note: I did not replace the orifice tube because it was difficult to get to. I'm kicking myself for not doing that!

Reciprocating compressors will do that sometimes- it's the pulses in resonance- try upping rpm - see if it smooths out--- really not usually an issue.
