Have I lost my catalytic mind?

Hi everybody I'm not a girl who's afraid to get my hands dirty.
I pulled the catalytic converter from my 1996 Suburban K-1500
and as expected that tripped the check engine light. The only code
that came up is for the O2 sensors. The truck idles fine but when
I press on the gas it kicks and bucks. Question #1- Is it ok to run
my truck w-out the catalytic converter and is there anything else it
may possibly be? Here are the things I've already done/checked:
checked fuel pressure, changed out fuel injector spider, top engine rebuild, good pressure to all cylinders. Checked for vacuum leaks. Is there anything
in the throttle body that could cause my symptoms? Thank you in advance,

if you used a vacuum guage to troubleshoot this you would have found this to show damaged/plugged converters.
O2 sensors fail after 100,ooomiles. upstream should be replaced if much older/longer miles..also wires and connectors hacked by hackers or improper wire routing..of these O2 sensors.

if you used a vacuum guage to troubleshoot this you would have found this to show damaged/plugged converters.
O2 sensors fail after 100,ooomiles. upstream should be replaced if much older/longer miles..also wires and connectors hacked by hackers or improper wire routing..of these O2 sensors.
Then I shall replace the 02 sensors immediately and report back.. thank you!

Maybe I should of been clearer regarding my catalytic converters. They are gone! removed from the vehicle forever (hopefully)(yes they were completely clogged) and I now have a dual exhaust setup with magnaflow mufflers.
Is this a fatal error?
Will the truck ever run normally again without cats?
Is there some sort of tweak or trick that needs to be performed?
Is my first move to replace the o2 sensors still? If so which ones?

I will also mention I was driving around on six cylinders for months due to a cracked head.. The rich fuel mixture is surely what killed my cats. I have since had the entire top end rebuilt.

with the engine running good now replace those sensors....yes the coolant kills these o2 sensors.. unburned fuel kills the cat converters..
