Which out of this list would be best for customization? They're all gonna be used.

Honda Civic has the best aftermarket of any car, anywhere, ever. There are entire warehouses that stock just aftermarket Civic parts. If you want custom, this is the way to go. Engine swap, turbos, superchargers, RWD setup, manual conversions, widebody kits, tower braces, racing suspension...I've seen drag civics that run the quarter in <10 that could embarass a proper American big-block. I personally don't like the way a modified civic looks/sounds, but that's just me...I'd take the big-block! :p
Subaru WRX has a good aftermarket but comes from the factory with a lot of power, so that's a bonus - plus the exhaust kits sound great. Don't forget the American's too - F-body Camaro's, Mustang GT or Mopar Hemi.

Depends what you mean by customize? Just for looks, handling, straight line accel, etc....

RSX or Prelude. Both are stronger than a Civic. The Scion's don't impress me. Keep one thing in mind, it's expensive to make a slow car fast.
