I hope you mean the rear O2 sensors only. The front ones are required for the engine to run properly.
And it may be illegal in your state/county to remove the cats. Check first.

I am running a BBK off road H pipe with Magnapack exhaust. Like Fusion said you still need the sensors. The BBK has bungs for all four sensors and I have had no codes after the install besides the one O2 I cracked the ceramic part the wires go into. replaced that one sensor and everything runs fine. Getting rid of the cats with no tune actually gained me 10 MPG and a wicked sound. Hopefully have a tune done this summer though.

If I believed that I'd have mine ripped off by now!
But the sound is good. A rear cat delete gives the exhaust note a good rumble even on the long and restrictive exhaust of a Ford Panther platform vehicle. Deleting all 4 cats makes it too loud in my opinion for street use. But on the highway they sound great!
But again, this is illegal and you should consult local and state laws before removing any factory-style cats. Even if the state and local laws say nothing about them and e-checks are not required, they are still Federally required and if you upset an officer enough you will get cited.

We have a car show here in Michigan up in the UP in late june. It was the first time I ran the car after the PI swap and BBK H on the highway for any extended amount of time. It was a 7 hour trip and i averaged 26-27 MPG and i have consistently seen the same since. I was shocked at the first gas station we stopped at on the way up, and did not believe it myself. I have owned the car since 2000 and had never gotten better than 18 on the highway crusin in 5th. I think its a combination of the massive weight reduction from the stock H, the PI swap. The down side is that the smell is pretty bad particularly when sitting in traffic, and crusing around town you really have to shift at the lower RPM's otherwise you attract unwanted attention.

Maybe you had partially clogged cats because it would require a very large weight reduction to make that much of a difference in mileage. And by PI swap did you do full PI engine or heads/cams/manifolds? Because maybe your old engine was losing compression or something.
My friend with a 97GT gets about 27-29MPG highway in 5th and it's fully stock, so it sounds like something may have been wrong. Hell, my land yacht with the same engine as the GT was getting 26-27MPG highway (w/ 4R70W auto) until I swapped my gears a few weeks ago.
