I have an 02 GT with 78k on it. Today it was running fine and now it does not start. If I unplug the MAF sensor it starts and runs fine. I an assuming this is the problem. If I plug it back in the car does not run. How long can you drive with it unplugged until I get a new one?

Technically indefinitely. All the PCM does is used pre-programmed MAF/VAF tables and other sensors in the open loop mode of operation. With a disconnected MAF the idle may be a little erratic until the engine warms up and you may lose some gas mileage.
I ran with the MAF disconnected in my GTP for approximately two weeks until the part arrived.

Is it better to by a GM sensor or will a Cardone one be ok?

You can get a Cardone new or remanufactured MAF sensor. However, many members had issues with the reman version. High failure rate. And it will depend on the cost along with any core charge that should be refundable.
Still hard to beat what ZZP offers for $159.99 even though the cost went up but a new Cardone MAF at Autozone will cost more and special order only. See link:
