Red Flashing Coolant Light and water tank empty after 1 mile of driving?

My coolant light flashes red and beeps at me, I filled the tank up with coolant, drove a mile and a bit and it came on again, pulled over and the tank was empty. I let the engine cool down and filled her up again. drove off and within about 3 miles it did it again but the engine fans are running constantly any ideas or comments on this would be good - I do not know the beetle engine at all.

Offhand I'd say your waterpump has failed - the plastic impeller loses its blades and fails to pump water. Common at about 120,000km or 80,000miles.
The proper method calls for replacement of the pump at this mileage as cheap insurance.
