my temperature stays all the way to cold then when im driving it bounces up and down.

Sounds like a sticking thermostat.
Relatively easy to replace. Trace your upper radiatior hose to the engine body. It sits right there.

.......it bounces up and down.

Check also for a loose connection at the sending unit.
