The A/C runs in defroster mode because of two reasons:
1) Prolonged sitting time and disuse of the A/C in winter leads to seal rot and pressure loss of coolant. Recirculating the A/C for 10 minutes a month is enough to keep seals fresh and the gaskets nice and swollen in the system.
2) Cool air carries less moisture. What fogs your windows in the cold? Moisture. The running A/C dries the air by condensing the water out of it before being blown on your windshield glass.
In short - nothing to worry about. It was *designed* to do this.
