2002 taurus overheating

replaced heads. had it flushed and replaced thermosate. water coolant tank pop from edges when overheated, also has antifreeze. car smells like carmel when over heating. both fans work fine. car reduces heat to normal when car start to run. going crazy.

Is the fan working? Are the radiator fins clear of obstructions? What percent coolant to water ratio are you using?
