Should have changed the t-stat while you had the intake sitting on your workbench! Aren't monday morning quarterbacks great?

Seriously though, if it ran after you put it together, you must have bumped something changing the coolant on the second go round. I can't believe you got the stat out without removing the throttle body. When I changed mine I fussed with the back bolt for 45 min before removing and reinstalling the throttle body in 10 minutes. Don't ever put yourself thru that again! I have the same car and have been there and done that.
