My wife has an 03 Matrix and I drive it from time to time. The last several times that I have driven it I have noticed that at start up with a cold engine that the engine will idle at 2000rpm until I shift into gear and it the drops about 1000rpm. If I put the car back in park it will again shoot up to 2000rpm. After the car has been running for 15 or so minutes the engine will idle at 500-750rpm. I know that when an engine is cold it will idle high but this car does it at any temp under about 70. Is this normal for this car or do I have a problem?

Normal...most cars will idle high until the engine heats up. Don't worry about it.
