90 jetta dying when i press on clutch!

Ok i have a 1990 Jetta GL 8v 1.8 Litre with 200k on it...
this has been a problem for a while now.. but it seems to be getting worse. when i start the car cold it usually starts and idles fine at about 800 rpm or so.. that is good. but the problem is as soon as i give it gas, the rpm jumps up accordingly.. and when i let it go it falls way below normal idle speed and then jumps back up over the normal idle speed and wavers between the two until it finds itself. this only happens some of the time...
sometimes it just dies when i do that. i will be driving down the road coming to a light and if i'm going in 5th gear lets say, at 2.5 rpm.. and put on the clutch, the thing will most likely die.. but very occasionally it will catch itself at rock bottom and revive and start jumping around until it finds the idle.

now could this be a weak idle control valve or something? i really don't know, and i need this car for a little longer until i can buy a new one, and i'm going to the junk yard tomorrow to pick up a few things, and would like to know if i can just pick up a replacement part that would fix it. thank you.

That fuel system is fairly difficult to diagnose, especially w/o seeing the car. Find an independent shop who is familiar with older VW's, the dealer won't want to see it.
