Seats and Steering Wheels..

Alright, I just picked up a beaten-up '91 Chevy S-10 Regular Cab.
I love it but there a few things that need to be done but I need some advice.

1. The Steering Wheel
The stock steering wheel as whole is fine but the thing is, I mesure 6'3" and weight a hefty 230lbs. The steering rubs on my legs and thus makes it that much harder to turn. I'd have one hell of a time making a hard turn in case of an emergency.

Now, I want to replace the steering but I'm not sure wether I can replace it with any steering I want. (I'd probably get a car's wheel - maybe an' old-school muscle car one) I'm wondering if I can just switch the steering without any problems or will there be some issues because of the size difference. The current steering does not have an airbag so changing it is that much easier.


2. Seating
Alright, the seats, are, well, desasterous.
They're ripped and torn. I want to use two bucket seats instead of the, um, one-piece-seat and I don't really like seat covers.
I was thinking of, again, checking the scrap yard for two nice bucket seats I could switch in.
Would it be cheaper to have the stock seat re-stitched or should I work on getting new seats?
