96 Mirage Overheating... I think?

Well the car was running ok, think the IAC is going out, because the idle goes up and down like you are pushing in the gas and letting off alot. So I set out to clean the throttle body and the IAC, while I was at it I replaced the thermostat, since I was right there at it. All went well til I put the car back together, I let it idle, it was running ok, still idling bad but no biggie, now it blows white smoke, smells sweet like antifreeze, and the fans on the radiator will not come on. The temp gauge goes up a little past half way, then i shut the car off. Never goes that high. I replaced the thermostat again, just to make sure I didn't get a bad one. Any help would be great, Thanx.

It sounds like the headgasket has failed. Pull the spark plugs. If one or more looks like it has been steam cleaned, you likely have head gasket failure. A compression test and/or leakdown test would also be in order.
