My wife's M35 needs some a/c work done. Replaced the compressor with a used unit and had a guy who we thought was going to be our mechanic work on it. We bailed on him when he started acting sketchy and Pep Boys said the it that the whole system needs replacing, minus the compressor.

What exactly was/is it doing?
LoL@ Pep Boys... "If we replace the whole system, we don't have to figure out what's actually wrong!"

Although, as expensive and extensive as things like the evaporators are, that's bad enough, labor wise. Evap is expensive, because everything down to the firewall has to come out, on most modern cars.

I've got another evaporator on a 4Runner lined up for tomorrow

Never leaks from multiple spots. Picks a weak spot and leaks from there. Usually given away by the oil that leaks out with it, which is why we usually charge it with some special dye and then look for the leak. There are also other tells to look for.
Kinda screwed to see, if it's leaking at the evaporator, because it's so hard to see. I've got in the habit lately of snaking a bore scope into the evap case to check for oil buildup or corrosion.

We've spent too much money on it trying to get the a/c right and currently fine with putting freon in when necessary.

I completely understand. There are issues with that. As freon leaks, it carries oil with it. Once the compressor dries up, it'll lock up just like a motor.
So every now and then, some oil needs to go back in with the freon. But not every time, because an oil flooded system doesn't cool either.

As a matter of fact, most of the times I ever replace compressors that aren't just really, really high mileage on any Toyota or Lexus (except RX350's), is caused by people who just keep adding freon and oil starve the compressors. That gets expensive, because before it locks up, it usually starts sending metal shards down stream through the condenser and dryer, sometimes they last long enough to clog the expansion valve. That results in having to change out the evaporator, condenser, expansion valve, dryer, and flushing all the lines.

Not trying to make a sale, just keeping you informed
