Took car in for oil change 2 months ago, just died and had no oil

I paid for an oil change about 2 months ago, yesterday I was driving on the interstate and the car broke down. Got towed to small town mechanic and was told I had no oil and I needed a new engine. Hoping to have the following questions answered.

1. Where did the oil go? At the shop they filled up my oil and there was no leaking at all, also no oil leaked on driveway.

2. I cant tell how reliable the mechanic is, do I really need a new or used engine to replace it? The car will start but doesn't sound great. No knocking noise though.

Bonus: My car is a 2005 Subaru Forester, what would be the best (most affordable without setting myself up for another breakdown in the near future) route for me to take going forward?

The old filter oring could have stuck to the block and the new filter put over top of it. Been know to happen. Can't imagine what new would run.

Yes, you are going to need a replacement engine. There is no bandaid fix for your car.

Replacement is the way to go though. Parts, labor, etc for rebuilding an engine will go well above what a used replacement would run you.

My first car was a Nissan Sentra back mid 90s and a few yeas later it had an oil leak I didn't notice which lead to low oil that broke the engine.

Replacement of the engine was cheaper and better solution. If you go to a reliable local (non franchise) mechanic, you may find good deals to help you.
