I think Warren's hit it on the head. The stuff comes in a roll, and is usually made of rubber or vinyl. I've seen a lot in red brick, but it wouldn't look too good because the scale would be way off. That stone texture looks good though. And it is raised, the stones are molded in.

I'm sure it looks like the walls that model Railways use for buildings in there displays.
One of the modelers in our club does the same thing.
Cut the wood out to size then you stick the false wall on to it.
You can get all types of wall finshers.
