VT Commodore Heating problem

I have a 2001 VT commodore S pack and just driving it around the temp started to shoot up, probably a simple fix but im stumped. coolent was empty for some reason or it only had water in it but filled it with coolent and them temp still rises. Im thinking thermostat has buggered or the electrics are having a dummy spit

Any comments are helpful
