coolant sensor or fan issue?

Im new here and searched the forum for a more recent topic on this but found many dated ones

I have a 2001 Impala that recently began having an issue. My check engine light came on. when i would turn my car off my radiator fans would stay running for 3 or 4 minutes after the engine stopped, and my internal temp gauge didnt go up ordown... I had a guy at autozone use on of the diagnostic things and it said i had a bad thermostat... but based on the fact it also told us my cars coolant sensor was reading 180 degrees no matter how long it sat not running, he suggested it was the sensor

I changed the sensor and everything went back to normal.. fans didnt run when the car was turned off and my check engine light went off and the temp gauge started working again

Everything was fine for about three weeks, but the other day driving i noticed my temp gauge not changing and when i turned my car off. once again the fans stayed on for several minutes.... but my check engine light hasnt came on. yet at least

Could this be a thermostat issue? or something else? if its an easy fix i would prefer to fix it myself, as my funds are limited and cant really afford a mechanic

Suggestions?
