Normally, there is a bypass valve which opens up above 4,000 RPM to allow you to enjoy the incredible noise this car makes while still satisfying European and North American noise regulations which are measured around 2,500 RPM. "Un-corking" basically means forcing this valve to be open all the time so you have a gradual build-up of engine noise that would even make Ferrari owners a little jealous.
The easiest way to achieve this is to remove the fuse (on the DB9 and V8 Vantage) for the vacuum pump controlling this valve so that it's always open.
