It hasnt dawned on me till today after wanting a racing wheel. Do any of them allow for the driver side airbag to work?Because most seem like there is a metal plate in the middle.

You answered your own question. Most road racing requires you to disable the air bag, so most people just remove it or disconnect it.

If you'll use your car for everyday driving, it's not advisable to take your airbag-equipped steering wheel, as it offers you protection, and I think in the U.S. it is also illegal to do so.
