is there a oil sensor switch that regulates the oil pressure to keep the gauge steady 3800 gs

What year Regal GS?

There is an oil pressure sending unit located by the oil filter assembly which is used for the IP idiot light and any analog oil pressure gauge, if equipped. However, the sensor does not regulate oil pressure to the engine. That is done by the oil pump and other internal engine components. Also, the oil filter will affect oil pressure.

What specific problem are you having?

What is the oil pressure reading at idle with engine cold and after proper warmup?

Delco has the level sending unit/float available as a separate part as shown at the link below.

As far as the fuel guage, it sounds like you may have pinched a wire when you did the pump swap.

On the oil pressure issue, it is not normal for the oil pressure to remain constant. It should fluctuate, lower at idle and higher as rpm increases.
