It could be as simple as a clogged fuel filter. Lets some gas in to start, then stops flowing as time goes by. It also could be a fuel pump problem. The fuel filter replacement is a lot easier than a fuel pump replacement.

I had a problem where the car would start okay, but as soon as you gave it gas and put a load on the engine it would stall out and quit. The problem on my car (87 GT) ended up being a clogged catalytic converter that created too much back pressure for the car to run. Once the cat was replaced it ran great again with no problems and as run great since.

I would also recommend checking your air filter. If it's clogged, you could be choking the engine as soon as it needs some air when you give it some gas. If you've got the stock filter assembly in there still, it connects to the left side of the car through the left scoop and flows under the left engine vent.

Replacing or cleaning an air filter is one of the easiest jobs you can do. A clogged air filter can rob your power as well as make your fuel economy go down the pooper. If your only problem is the air filter, you should see an enormous increase in performance with a clean one.

I personally am not a fan of the stock air filter assembly. I replaced mine with a Spectre 8136 cone filter, a short 60 degree pipe, a 2 1/2" to 3" connector (I think) and a few hose clamps, and blam-o! A semi-cold air intake.
