Depends, are you talking about the cars used for the stunts or the cars used for 'show'.
The stunt cars used a 318ci, the 'show' car used a 426 Hemi. Both cars were an R/T clone.

Get a 426 hemi from any number of Revell or AMT kits, and grab a blower and you're done.

According to Year One, none of the movie cars had blowers. I contacted them directly before I started on the build pictured below and the main guy responsible for the cars replied in an email (that I no longer have) supplied that as one of the interesting bits of information. Oh, don't be a dink like me and paint it Hemi Orange as that is not the correct color but I already had the car painted before I contacted Year One. :)
