GSR Tires?

I have a 1998 GS-R and I need new tires. I am replacing the stock Michelins (XGT V4) after 57000 kms (I'm in Canada). Anyone have recommendations? I want to stay with the same size (195/55R15). Does a lower speed rating (T instead of V) make much of a difference? (I intend to stay below 190 km/hr - 118 mph).

Are you looking for all-weather tires, or do you plan to have separate tires for summer and winter?
