67 galaxie problems?

Ok, I have a 2dr 67 galaxie 500 with a 390. I just had the original 2v carb and intake swapped for a 4b edlebrock and high pro intake manifold. He re-jetted the carb and tweaked it as good as he could. He said it was hard to get it perfect because it is so cold here right now. Anyways when i get on the gas hard i here a click and there is a delay like im not even on the gas then it reacts and takes off-my problem is that i am going to race it this spring/summer and that delay will kill me-so what might be the problem? Thanks!

When it is cold outside the engine requires richer jetting to balance out the denser air. You are probably lean on the accelerator pump for the current conditions. You may also need bigger main jets or different needles for the current conditions. The motor may run perfectly once the weather warms up. Wait until then to sort out the jetting.
It could also be the ign timing or distributor advance curve. What distributor are you running ?

Just curious as to why the new carb was re-jetted if it was matched to engine properly in the first place no doubt. Top tuners do lots of testing before they make any changes so they have a baseline to work from. I would have left the factory spec jets in to see if they were lacking before putting richer ones in.
