Couple reasons but the main being that moly lube (used for engine assembly will clog of an oil filter very very quickly. This is especially bad with a new engine because there are more particles in the oil.

You should be using non-detergent oil to "break in" the engine. This oil will not maintain it's lubricity over an extended period, especially in larger engines. It is also quite "heat sensitive", where oil pressure will drop significantly if the oil temperature gets too high.
Changing the oil accomplishes a couple of things. There is inevitably, some airborne debris that will find it's way into a new assembly. There may also be some residuals from the machining processes. The non-detergent oil does not suspend the dirt in the oil so gravity and flow will "wash" the dirt down to the pan, where it will come out at the first change. The other aspect is that the less lubricity makes the rings wear "in" more quickly. Once all this occurs, you change the oil to a high quality oil (modern, multi-grade) and the engine should be "good to go".
Actually, WOT bursts will aid in seating the rings, if you don't over rev it. 5,000 shouldn't hurt it, as has been stated. I also suggest, you use the engine to slow the car down, after the WOT burst (leave it in 2nd gear, and use engine "braking" to slow it down). This will put pressure on both sides of the rings, further accellerating seating.

Wow. thanx for all the info. I have probly about 400 miles with it around town.Should i still do anything of what you guys are saying with the non detergent oils or is it too late? Right now its in the process of me trying to bring it from sea level to 4000 ft elevation so im trying to make sure that its not gonna overload on me when it comes up. and im pretty sure i havent taken it over 5k rpms cuz the most ive done in it is probly like 80 mph in drive so...im just worried cuz i want my baby to last for ever...lol....
